New Chamber Member Brings Southern Fried Chicken, Rotisserie, And Cold Beer To Colorado Boulevard
There’s a new bird in town. Waldo’s Chicken & Beer, one of the newest members of the Greater Glendale Chamber of Commerce, is serving up Southern fried chicken, rotisserie chicken, scratch-made sides, and plenty of cold beer from its location at 640 S. Colorado Blvd. in Glendale.
The restaurant’s straightforward concept is right there in its name, chicken and beer, but Waldo’s puts considerable emphasis on what happens in the kitchen. The company says its teams begin each morning preparing the menu from scratch, including sides, sauces, and dressings.
Chicken is offered two primary ways: Southern fried or rotisserie. The fried chicken spends the night in a pickle brine before being dipped in buttermilk, hand-breaded with seasoned breading, and fried. The rotisserie version takes a different route, beginning with an overnight brown sugar brine before the chicken is seasoned and roasted.
From there, customers can have their chicken just about any way they want it, on the bone, on a sandwich, in a basket, or as part of a salad.
The menu includes hand-breaded chicken tenders as well as sandwiches such as the O.G. Fried Chicken, made with a fried chicken thigh, pickles, lettuce, and mayonnaise; the Roost, featuring pulled rotisserie chicken, pickles, and Alabama white sauce; and the spicy Fowl Mouth, combining fried chicken with habanero oil, cheddar, jalapeño slaw, mayonnaise, and Comeback Sauce.
Waldo’s also offers traditional chicken plates accompanied by scratch-made sides and a cheddar biscuit, along with larger meals designed for families and groups. Homemade banana pudding and fresh-baked cookies provide options for those who manage to save room for dessert.
Then there is the other half of the Waldo’s name. The restaurant features a rotating beer selection, with the company placing an emphasis on local and regional craft beers along with familiar favorites. Cocktails, wine, and Waldo’s spiked slushies are also available.
The atmosphere is intentionally casual. Waldo’s describes its restaurants as comfortable, no-frills gathering places suitable for everything from a quick meal to an afternoon on the patio. Televisions throughout the restaurant also make it a destination for watching sports.
The Glendale restaurant is one of several Waldo’s locations in Colorado, joining restaurants in Denver’s Northfield neighborhood and Aurora’s Southlands area, with another location listed as coming soon in Thornton. Each Waldo’s location is locally owned and operated.
For the Greater Glendale Chamber of Commerce, the addition of Waldo’s adds another restaurant to an organization that has worked since 1999 to connect and promote businesses in and around Glendale.
Waldo’s Glendale location is open Sunday through Thursday from 11 a.m. to 9 p.m. and Friday and Saturday from 11 a.m. to 10 p.m. Happy hour runs from 3 to 6 p.m. daily, with two-for-one beer and wine specials, and the promotion is offered all day Tuesday and Sunday.
With its combination of Southern comfort food, a casual neighborhood atmosphere, and a name that leaves little doubt about its specialties, Waldo’s Chicken & Beer is settling into its new home in Glendale within Glendale CitySet at 640 S. Colorado Blvd. For more information, visit www.waldoschicken.com.
